Ingredients
  

  • 1 cup almond flour
  • 1/4 cup gluten-free all-purpose flour
  • 1/4 cup unflavored protein powder
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1 cup almond milk
  • 2 tablespoons melted butter
  • 1 tablespoon maple syrup
  • 1 teaspoon vanilla extract

Method
 

  1. Whisk together almond flour, GF flour blend, protein powder, baking powder, and salt in a bowl.
  2. In a separate bowl, whisk eggs, almond milk, melted butter, maple syrup, and vanilla extract.
  3. Add wet ingredients to dry ingredients and stir until smooth. Let batter rest for 5 minutes.
  4. Heat a non-stick pan over medium heat and lightly grease.
  5. Pour about 1/4 cup of batter per pancake onto the hot pan.
  6. Cook for 2-3 minutes until bubbles form, then flip and cook for another 1-2 minutes.
  7. Repeat with remaining batter, adjusting heat as needed.
  8. Serve warm with your favorite toppings.

- Don't overmix the batter; a few lumps are okay.
