Preheat oven to 375°F (190°C).
Lightly spray a large oven-safe pan with gluten-free cooking spray.
Add 1 lb. ground beef to the pan and break it apart.
Combine 1 tbsp cumin, 2 tsp onion powder, ½ tsp garlic powder, 2 tsp oregano, 2 tsp paprika, and ½ tsp salt in a small bowl.
Sprinkle seasoning blend onto the ground beef and stir well to fully coat.
Cook meat over medium heat until browned, about 8-10 minutes, then drain excess oil.
Pour ½ cup of the enchilada sauce into a shallow dish for dipping tortillas. If tortillas are stiff, microwave them for 30 seconds between damp paper towels.
Spray a 9x13 inch glass baking pan with gluten-free cooking spray.
