Zingy Strawberry Basil Ginger Cocktail

Ingredients
  

  • 6 oz vodka (3/4 cup )
  • 2 cups chopped strawberries
  • 6 basil leaves (torn)
  • 1 cup strawberry-basil puree
  • 3 , 5 oz cans ginger ale OR ginger beer (Fever Tree brand recommended)
  • 1 lime (for garnish and juice)

Method
 

  1. Add 2 cups chopped strawberries and 6 torn basil leaves to a high-powered blender then blend until very smooth. Strain if desired then pour into a mason jar or other container with a tight-fitting lid. This strawberry-basil puree can be made up to 2 days ahead of time.
  2. Fill 3, 16oz cocktail or pint glasses each to the top with ice. To each glass add 2oz (1/4 cup) vodka, 1/3 cup of the prepared strawberry-basil puree, and 5oz ginger ale/beer then stir to combine.
  3. Alternatively, you can combine the full amounts of vodka, strawberry-basil puree, and ginger ale/beer into a pitcher then stir together to combine. Garnish with a smacked basil leaf and/or sliced strawberries then serve.
  4. For a non-alcoholic version, follow the directions in steps 1-3 but omit the vodka.

Notes

- For the freshest flavor, use ripe, in-season strawberries. If you can't find fresh, frozen strawberries work well for the puree.
- If you prefer a smoother texture, straining the strawberry-basil puree through a fine-mesh sieve is crucial. I once skipped this step, and the small basil bits detracted from the smooth sip.
- For a mocktail version, simply omit the vodka. The blend of strawberry, basil, and ginger is delicious on its own.
