Ingredients

  • 6 tablespoons (85g) butter
  • 1 10-ounce bag (283g) mini marshmallows
  • 1 teaspoon vanilla extract
  • ¼ teaspoon kosher salt
  • 1 drop green food coloring
  • 6 cups (150g) gluten-free crispy rice cereal
  • 8 gluten-free pretzel sticks
  • ½ cup (85g) white chocolate chips
  • Christmas sprinkles (for decorating)

Instructions

  • Lightly spray a 9-inch round pan with cooking spray.
  • Melt butter in a large saucepan over medium-low heat until golden brown and nutty, then remove from heat.
  • Add marshmallows and stir until almost completely melted. Stir in vanilla, salt, and green food coloring until smooth. Mix in the crispy rice cereal until evenly coated.
  • Press the mixture evenly into the prepared pan. Let it cool for 20 minutes.
  • Cut the set treats into 8 equal wedges. Gently press a pretzel stick into the bottom of each wedge to serve as the trunk.
  • Melt white chocolate chips in a microwave-safe bowl in 20-second increments, stirring until smooth. Transfer to a piping bag, snip the corner, and drizzle over each tree. Decorate with sprinkles immediately.

Notes

- For perfectly shaped trees, use a sharp knife and a gentle sawing motion to cut the treats.
- If white chocolate seizes, add a tiny bit more melted white chocolate or a teaspoon of neutral oil (like vegetable or canola) to smooth it out.
- These treats can be stored in an airtight container at room temperature for up to 3 days.
