- 6 large eggs
- 1 cup light corn syrup (240ml)
- ¾ cup granulated sugar (150g)
- 2 tbsp unsalted butter (28g)
- 2 tsp pure vanilla extract
- ¼ tsp salt
- 2 cups pecans (200g)
Preheat oven to 350°F (175°C). Generously grease a 9-inch pie dish with butter or cooking spray.
In a large bowl, whisk together eggs, corn syrup, sugar, melted butter, vanilla extract, and salt until smooth and well combined.
Stir in pecans until evenly distributed.
Pour mixture into prepared pie dish, spreading pecans evenly across the surface.
Bake for 45–50 minutes, until the center is set but still slightly jiggly. A knife inserted near the center should come out mostly clean. Remove from oven and cool on a wire rack for at least 2 hours before slicing. Serve at room temperature or chilled.
- Don't overbake: The pie should still have a slight jiggle in the center when removed from the oven. It will continue to set as it cools.
- Even pecan distribution: Stir pecans just before pouring the mixture into the dish to prevent them from sinking to the bottom.
- Proper cooling: Allow the pie to cool completely for at least 2 hours on a wire rack. This is crucial for the filling to fully set and achieve the correct texture.
- Storage: Store leftover crustless pecan pie covered in the refrigerator for up to 3-4 days.
