Ingredients

  • 6 large eggs
  • 1 cup light corn syrup (240ml)
  • ¾ cup granulated sugar (150g)
  • 2 tbsp unsalted butter (28g)
  • 2 tsp pure vanilla extract
  • ¼ tsp salt
  • 2 cups pecans (200g)

Instructions

  • Preheat oven to 350°F (175°C). Generously grease a 9-inch pie dish with butter or cooking spray.
  • In a large bowl, whisk together eggs, corn syrup, sugar, melted butter, vanilla extract, and salt until smooth and well combined.
  • Stir in pecans until evenly distributed.
  • Pour mixture into prepared pie dish, spreading pecans evenly across the surface.
  • Bake for 45–50 minutes, until the center is set but still slightly jiggly. A knife inserted near the center should come out mostly clean. Remove from oven and cool on a wire rack for at least 2 hours before slicing. Serve at room temperature or chilled.

Notes

- Don't overbake: The pie should still have a slight jiggle in the center when removed from the oven. It will continue to set as it cools.
- Even pecan distribution: Stir pecans just before pouring the mixture into the dish to prevent them from sinking to the bottom.
- Proper cooling: Allow the pie to cool completely for at least 2 hours on a wire rack. This is crucial for the filling to fully set and achieve the correct texture.
- Storage: Store leftover crustless pecan pie covered in the refrigerator for up to 3-4 days.
