Ingredients

  • 2 ½ cups cashews
  • cup honey
  • 2 tbsp melted butter
  • ½ tsp smoked paprika
  • ¼ tsp kosher salt
  • ½ tsp cayenne pepper, optional for spicy version

Method

  1. In a small mixing bowl, combine honey, melted butter, smoked paprika, kosher salt, and cayenne pepper (if using). Stir well until combined.
  2. In a large mixing bowl, add the cashews and pour the honey mixture over them. Fold gently with a spatula until all cashews are evenly coated.
  3. Spread the coated cashews into a single layer on a prepared baking sheet. Bake for 15 to 20 minutes in a preheated oven at 300°F (150°C), tossing the nuts every 5 minutes to ensure even cooking and prevent burning.
  4. Serve the nuts warm, or let them cool completely on the baking sheet before serving at room temperature. Break the nuts apart if they stick together. Enjoy your homemade honey-roasted cashews!

Notes

- For extra crunch, ensure your cashews are spread in a single layer on the baking sheet. Overcrowding will steam them instead of roasting.
- Don't skip tossing the nuts every 5 minutes during baking. This prevents burning and ensures an even golden-brown color.
- If the nuts stick together after cooling, don't worry! They are easy to break apart with your hands. Store them in an airtight container at room temperature for up to two weeks.
