  • 2/3 cup (135g) granulated sugar
  • 5 tablespoons fresh lemon juice
  • 1 tablespoon (6g) lemon zest
  • Garnish (berries or fresh mint)
  • pinch salt

Method
 

  1. Combine cream and sugar in a saucepan. Bring to a boil, stirring until sugar dissolves.
  2. Reduce heat and boil gently for 3 minutes, stirring constantly.
  3. Remove from heat, stir in lemon juice and zest. Cool for 10 minutes.
  4. Divide into ramekins, cover, and refrigerate for at least 1 hour until set.
  5. Garnish with berries or mint before serving. Enjoy chilled!

- For the silkiest texture, ensure the cream and sugar mixture boils gently for the full 3 minutes, stirring constantly to prevent scorching.
