Ingredients
  

  • 1 (24 oz.) loaf Canyon Bakehouse Heritage Style Honey White (or 9 cups of bread cubes)
  • ¾ cup butter (or dairy-free butter)
  • 1 medium yellow onion, chopped
  • 4 sticks celery, thinly sliced
  • 1 ½ teaspoons dried thyme leaves
  • ½ teaspoon ground sage
  • ½ teaspoon rosemary
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 2 cups chicken or veggie broth (3 cups for a wetter stuffing)

Method
 

  1. Let bread slices air dry for 1 to 2 hours OR for up to 2 days depending on how dry it is, then cut into 1-inch pieces.
  2. In a Dutch oven over medium heat, melt butter. Add onion and celery and cook until the onion is soft and translucent.
  3. Stir in thyme, sage, rosemary, salt, and pepper. You can add more seasonings if you like.
  4. Add bread cubes and mix until evenly coated.
  5. Drizzle broth over the bread mixture and toss until well mixed. See notes below for finishing it on the stove.
  6. Bake in a greased 2.5 qrt casserole dish at 350°F (180°C) for 35 to 45 minutes. If you are stuffing a turkey, leave out the broth, the juices from the turkey will moisten it.

Notes

- For the crispiest stuffing, make sure your bread cubes are completely dry before adding them to the mixture. I've found that letting them air dry overnight on a baking sheet yields the best results.
- If you're stuffing a turkey, omit the broth from the recipe. The juices from the turkey will naturally moisten the stuffing as it cooks, infusing it with extra flavor.
- To store leftovers, refrigerate in an airtight container for up to 3-4 days. Reheat in the oven at 300°F (150°C) until warmed through, covering with foil to prevent drying out.
